Man, that is something! That appears to be a supersonic pass -- note when the sound of the jet shows up, and also the condensation of the humid surface air behind the leading edge shocks.

When you do that, you want to be sure your path is clear and even then you don't want to make any little mistakes.

"While taking off in a MD-10 out of Honolulu, Hawaii, a phenomenon occurs where the radical pressure drop over the top of the airplane wing allows the high humidity in the air to condense. The condensation usually occurs along the vortices that attach themselves to parts of the aircraft wing and develop in the slipstream. Note the flow of the slipstream over the wing marked by the vortices embedded in and oriented coincident to the flow. "

"Cloud formation is actually formed at a lower speed than transonic. The first time I saw it a an air show, I was expecting a sonic boom (over downtown Jacksonville!), but there wasn't. I've learned since them. :-P
Faster than I can drive my car, yes. Transonic? No."

"There is enough moisture over the ocean to actually cause that phenomon to happen at various speeds, not just supersonic. That is why people on the navy carriers can get that shot more often than most land-based aircraft photographers."

"For example, when sea-level temperature is 58 degrees Fahrenheit, the temperature at 30,000 feet drops to minus 49 degrees Fahrenheit. This temperature gradient helps bend the sound waves upward. Therefore, for a boom to reach the ground, the aircraft speed relative to the ground must be greater than the speed of sound at the ground. For example, the speed of sound at 30,000 feet is about 670 miles per hour, but an aircraft must travel at least 750 miles per hour (Mach 1.12, where Mach 1 equals the speed of sound) for a boom to be heard on the ground."
