Well it's got to have something do to with the fact that the sum of any two digit number, taken away from that number can only equal a certain outcome.
Allow me to try and clarify.
If you actually perform the first stages, ie, think of a 2 digit number, add the digits and subtract, you get a new number. Ie, 69 - 15 (sum of 6 and 9) = 54.
Do this for a few more sets of numbers, till you have a set of finished numbers. Ie, 12 - 3 = 9, 98 - 17 = 81, 71 - 8 = 63.
Now, looking at the symbol grid, what do you notice about all the symbols of any of the numbers listed?
They are all the same... It's a starting point anyway, but basically, its just a number trick.

Experience speaks more then hypothesizing ever can. More-so in chemistry.
Yes, you will always end up with a multiple of 9, all of which have the same symbol.
11 - 1+1 = 9
29 - 2+9 = 18
37 - 3+7 = 27
etc.
They will always 'home in' as increasing the original number by one for example, (i.e. 64 instead of 63), will increase the number you are taking away by 1 (6+4=10 instead of 6+3=9) giving you the same number (63 => 54, 64 => 54).
