You will need acetylene / Oxygen to weld steel, remember the gas your burning in the jet will burn every bit as hot as your "lighter gas" (butane I guess).
Starting welding with thin stainless steel will give you the shits, Thicker steel wont give an efficient engine for propulsion but is much easier to use.
For steel 1.6mm+ its easier to use a mig welder, you can get a cheap gasless mig for about $200US which will be the easiest to use and once you have it you will sure find many uses for it. (I think gasless migs will only weld mild steel, im unsure)
Im a "jet noob" myself so others can answer the jet questions.
